Usually the grapes are plucked in the night time while they are frozen, and they are harvested completely by hand rather than by any other means. After the grapes have been collected by the wine maker, they will be very delicately pressed because only the free running juice is harvested from the grapes. The frozen water, the sugars and other particles that are in the juice will ferment together to create this unique blend of ice wine.
In other words, this is a rare wine for a reason – It is a tricky to make variety of wine that cannot be easily made or readily made based on supply and demand. When it is made available, which is clearly rare, ice wine has to be offered at a premium price so that every bottle is cherished and cared for and collected by people that understand its rarity.
